Η φάβα είναι ένα ξεχωριστό όσπριο με χαρακτηριστικό ωχρό κίτρινο χρώμα που προέρχεται από το φυτό λαθούρι, ένα είδος κουκιού. Ανθίζει Απρίλιο-Μάιο και οι καρποί αφού συλλεχθούν, αφήνονται να ξεραθούν. Μετά γίνεται επιλογή αυτών και κατόπιν το σπάσιμο τους σε μικρότερα κομμάτια. Με αυτή τη μορφή φτάνει στον τελικό καταναλωτή.

Είδη φάβας καλλιεργούνται σε πολλά μέρη της Ελλάδας με πιο φημισμένη αυτή της Σαντορίνης, που προέρχεται από μία συγκεκριμένη ποικιλία λαθουριού και έχει μέγεθος κόκκου χοντρής άμμου. Το ηφαιστειογενές χώμα του νησιού συμβάλλει στην ιδιαίτερη γεύση της. Στον οικισμό που έχει βρεθεί στο Ακρωτήρι, έχουν ανακαλυφθεί σπόροι της ποικιλίας αυτής αποδεικνύοντας ότι είναι γηγενής του τόπου.

Ανήκει στην κατηγορία των ψυχανθών και η χρήση της έχει μια πληθώρα ευεργετικών ιδιοτήτων για την υγεία. Περιέχει ιδιαίτερα υψηλά ποσοστά υδατανθράκων (63%) και πρωτεϊνών (20%), ενώ έχει πολύ λίγα λιπαρά (1gr ανά 350 θερμίδες). Αποτελεί πλούσια πηγή φυτικών πρωτεϊνών, βιταμινών και ιχνοστοιχείων (όπως σίδηρο, χαλκό, φώσφορο, κάλλιο και μαγνήσιο), χωρίς τριγλυκερίδια και κορεσμένα λιπαρά. Πέρα από τη σημαντική θρεπτική της αξία, η πλούσια περιεκτικότητά της σε διαλυτές φυτικές ίνες, την κάνει ένα ιδανικό τρόφιμο για τη διαχείριση
του βάρους και την καλή λειτουργία του εντέρου, ενώ συμβάλλει και στη βελτίωση της λειτουργίας της καρδιάς.

Εκτός από τη μορφή της σούπας που όλοι γνωρίζουμε μπορεί να μαγειρευτεί σαν πουρές, να μπει σε σαλάτες με λαχανικά, να συνοδεύει κρέατα και ψαρικά, να γίνει ντιπ αλλά και να μαγειρευτεί σε ριζότο.

Description :

Fava is cultivated in several regions in Greece, with Santorini fava being the most famous. It comes from a special variety of “lathouri” and it’s the size of a big grain of sand. Its special taste is due to the volcanic soil of the island.

Seeds of this variety were found in excavations in Akrotiri settlement, and this fact proves that the plant is native.

It belongs to the family of pulses and has several beneficial properties for our health. It contains a high percentage (63%) of carbohydrates, and proteins (20%), and very small amount of fats (1gr per 350 kcal). It’s a rich source of high quality vegetable proteins, vitamins and minerals and trace elements (as ferrum, copper, phosphorous, potassium, magnesium), without triglycerides and saturated fats.

Apart from its nutritional value, it is rich in soluble vegetable fibers, that makes it ideal for weight control and good for the intestine, while it contributes to the improvement of the heart function.

It can be cooked as a soup or as a puree, to be served with vegetable salads, meat and fish dishes, or can become a “dip” and be used in a risotto, as well.

    Capers is excellent source of calcium, potassium, magnesium, sodium and zinc.
    Furthermore, its seeds contain fatty acids, mostly linoleic acid, which belongs to the group of healthy and beneficial fats. They are rich in flavonoids as quercetin and kaempferol.

    Therapeutic properties
    Even in ancient times the therapeutic properties were well known. Dioscorides recommended the leaves and the roots of capers for the treatment of edemas. Also, in a 15th century medical textbook, the writer claims that capers “treats the spleen problems, abases the intestinal worms, cures the piles, strengthens the sperm, helps in stiffness and rheumatic problems…”

    Capers is considered a multiply therapeutic herb that has been used in medications and cosmetics. It is anti-inflammatory, antioxidant and has diuretic action.It reinforces the immune system, stimulates the blood circulation and helps the respiratory function.
